Spicy Garlic Butter Shrimp Tacos with Mango-Avocado Salsa

Ingredients

For the Shrimp:

  • 1 lb large shrimp (peeled, deveined)
  • 3 tbsp butter
  • 4 garlic cloves, minced
  • 1 tsp smoked paprika
  • ½ tsp cayenne (adjust to taste)
  • 1 lime (juiced)
  • Salt & pepper

For the Salsa:

  • 1 ripe mango, diced
  • 1 avocado, diced
  • ¼ cup red onion, finely chopped
  • 1 jalapeño, seeded & minced
  • 2 tbsp cilantro, chopped
  • 1 lime (juiced)

To Serve:

  • 8 small flour or corn tortillas
  • 2 cups shredded purple cabbage
  • Cotija cheese (optional)
  • Lime wedges

Instructions

1️⃣ Cook Shrimp:

  • Melt butter in a skillet. Sauté garlic 30 sec until fragrant.
  • Add shrimp, paprika, cayenne, salt, and pepper. Cook 2-3 mins per side until pink. Squeeze lime juice over top.

2️⃣ Make Salsa:

  • Gently mix mango, avocado, onion, jalapeño, cilantro, and lime juice.

3️⃣ Warm Tortillas:

  • Heat tortillas in a dry skillet for 30 sec per side.

4️⃣ Assemble Tacos:

  • Layer cabbage, shrimp, and salsa in tortillas. Sprinkle with Cotija.
