Ingredients
Base:
- 2 cups cooked Japanese short-grain rice
- 2 packs nattō (fermented soybeans, ~1.5 oz each)
- 2 fresh egg yolks (or 1 whole egg)
Toppings & Seasonings:
- 1 tbsp soy sauce
- 1 tsp karashi mustard (included in nattō pack)
- 1 green onion, finely chopped
- ½ cup shredded nori (or torn sheets)
- Optional: Pickled ginger, bonito flakes
Instructions
1️⃣ Prepare Nattō:
- Open nattō packs. Stir vigorously with included mustard and soy sauce until sticky and stringy (~1 min).
2️⃣ Assemble Bowl:
- Place hot rice in a bowl. Top with nattō mixture.
- Make a small well in the center, add egg yolk.
3️⃣ Garnish & Serve:
- Sprinkle with green onions and nori. Mix at the table just before eating.
