Traditional Nattō Rice Bowl (Japanese Fermented Soybean Breakfast)

Embrace bold Japanese flavors with this nutritious nattō rice bowl—sticky rice topped with fermented soybeans, a raw egg yolk, and savory toppings. An acquired taste packed with probiotics and protein to energize your morning!

Ingredients

Base:

  • 2 cups cooked Japanese short-grain rice
  • 2 packs nattō (fermented soybeans, ~1.5 oz each)
  • 2 fresh egg yolks (or 1 whole egg)

Toppings & Seasonings:

  • 1 tbsp soy sauce
  • 1 tsp karashi mustard (included in nattō pack)
  • 1 green onion, finely chopped
  • ½ cup shredded nori (or torn sheets)
  • Optional: Pickled ginger, bonito flakes

Instructions

1️⃣ Prepare Nattō:

  • Open nattō packs. Stir vigorously with included mustard and soy sauce until sticky and stringy (~1 min).

2️⃣ Assemble Bowl:

  • Place hot rice in a bowl. Top with nattō mixture.
  • Make a small well in the center, add egg yolk.

3️⃣ Garnish & Serve:

  • Sprinkle with green onions and nori. Mix at the table just before eating.
