Ingredients
For the Hummus (Greek Style):
- 2 cups cooked chickpeas (or 1 can, drained)
- ⅓ cup tahini
- 2 garlic cloves
- ¼ cup lemon juice
- ½ tsp cumin
- ¼ cup ice water
- 3 tbsp extra-virgin olive oil
- Salt to taste
For the Falafel (Greek-Inspired):
- 1½ cups dried chickpeas (soaked 24 hours)*
- 1 small red onion
- 3 garlic cloves
- ½ cup fresh parsley
- ½ cup fresh dill (Greek twist!)
- 1 tsp coriander
- 1 tsp baking powder
- Oil for frying
To Serve:
- Warm pita bread
- Kalamata olives
- Sliced cucumbers & tomatoes

Instructions
1️⃣ Make Hummus:
- Blend chickpeas, tahini, garlic, lemon, cumin, and salt until smooth.
- Gradually add ice water until creamy. Drizzle with olive oil and paprika.
2️⃣ Prepare Falafel:
- Pulse drained chickpeas, onion, garlic, herbs, and spices until coarse.
- Form into small patties. Fry in 350°F (175°C) oil for 3-4 mins until golden.
3️⃣ Assemble:
- Spread hummus in a bowl, create a well for olive oil.
- Arrange falafel, pita, olives, and veggies on a platter.
