Creamy Coconut & Banana Porridge (5-Minute Power Breakfast)

Cozy up with this ultra-creamy coconut porridge—loaded with caramelized bananas, chia seeds, and a drizzle of peanut butter. Packed with fiber and healthy fats to keep you full all morning!

Ingredients

For the Porridge:

  • ½ cup rolled oats
  • 1 cup coconut milk (canned for creaminess)
  • ½ cup water
  • 1 tbsp chia seeds
  • 1 tsp vanilla extract
  • Pinch of salt

Toppings:

  • 1 banana, sliced & caramelized*
  • 1 tbsp peanut butter
  • 1 tsp honey or maple syrup
  • 1 tbsp toasted coconut flakes
  • Cinnamon

*Caramelize bananas in a dry pan for 2 mins per side

Instructions

1️⃣ Cook Porridge:

  • In a pot, combine oats, coconut milk, water, chia, vanilla, and salt.

2️⃣ Caramelize Bananas:

  • While porridge cooks, sear banana slices in a pan until golden.
