Crunchy Blueberry Almond Granola (Healthy Breakfast Bowl)

Wake up to this homemade blueberry granola—clusters of toasted oats, nuts, and coconut infused with vanilla and cinnamon, packed with dried blueberries for bursts of sweetness. Perfect over yogurt, milk, or straight from the jar!

Ingredients

Dry Ingredients:

  • 3 cups rolled oats
  • ½ cup sliced almonds
  • ½ cup shredded coconut
  • ¼ cup flaxseeds
  • ½ tsp cinnamon
  • ¼ tsp salt

Wet Ingredients:

  • ¼ cup maple syrup
  • 2 tbsp coconut oil (melted)
  • 1 tsp vanilla extract

Add After Baking:

  • ½ cup dried blueberries
  • 2 tbsp chia seeds (optional)

Instructions

1️⃣ Mix & Bake:

  • Preheat oven to 300°F (150°C).
  • Toss all dry ingredients (except blueberries/chia) in a bowl.
  • Whisk wet ingredients, pour over dry mix, and stir until coated.
  • Spread on a parchment-lined tray. Bake for 25 mins, stirring halfway.

2️⃣ Cool & Crisp:

  • Let cool completely (it crisps as it cools!).
  • Mix in blueberries and chia seeds.

3️⃣ Store & Serve:

  • Keep in an airtight jar for 2 weeks.
  • Serve with yogurt and fresh fruit.
