Ultimate Chocoholic’s Berries Cake (Decadent & Vegan)


Calling all chocolate lovers! This Chocoholic’s Berries Cake combines rich, fudgy chocolate layers with bursts of fresh berries and velvety vegan ganache. Perfect for birthdays, anniversaries, or when you need a show-stopping dessert that happens to be dairy-free!

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1¾ cups coconut sugar
  • ¾ cup cocoa powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 1½ cups cold brewed coffee (or water)
  • ½ cup vegetable oil
  • 2 tbsp apple cider vinegar
  • 2 tsp vanilla extract

For the Filling:

  • 1½ cups mixed berries (strawberries, raspberries, blackberries)
  • 2 tbsp chia seeds + 6 tbsp water (chia “jam”)

For the Chocolate Ganache:

  • 1 cup dairy-free chocolate chips
  • ½ cup full-fat coconut milk

For Decoration:

  • Fresh berries
  • Edible flowers (optional)
  • Cocoa powder for dusting

Instructions:

1️⃣ Prep:

  • Preheat oven to 350°F (175°C). Grease and line two 8-inch cake pans.

2️⃣ Make the Cake:

  • Whisk dry ingredients in a large bowl.
  • Add wet ingredients and mix until just combined (batter will be thin).
  • Divide between pans and bake for 30-35 minutes. Cool completely.

3️⃣ Prepare Fillings:

  • Make chia jam by mixing chia seeds with water, let thicken for 15 mins.
  • Toss berries with 1 tbsp sugar (optional).

4️⃣ Make Ganache:

  • Heat coconut milk until steaming, pour over chocolate chips, let sit 2 mins, then stir until smooth. Cool to spreadable consistency.

5️⃣ Assemble:

  • Place first cake layer, spread with chia jam, then berries.
  • Top with second layer, frost with ganache, and decorate with fresh berries.
