Ingredients:

  • 300g (10 oz) elbow macaroni
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups milk (whole or 2%)
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, shredded
  • ½ cup mozzarella cheese, shredded
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp paprika (optional)
  • ½ cup breadcrumbs (for topping)
  • 1 tbsp olive oil or melted butter (for topping)

Instructions:

  1. Preheat the oven to 375°F (190°C). Grease a baking dish.
  2. Cook the macaroni in salted water until al dente. Drain and set aside.
  3. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute to make a roux.
  4. Slowly whisk in the milk and cream. Let simmer until thickened, about 4–5 minutes.
  5. Remove from heat and stir in cheddar and mozzarella cheese. Add salt, pepper, and paprika.
  6. Mix the cheese sauce with the cooked macaroni and pour into the baking dish.
  7. In a bowl, toss breadcrumbs with olive oil or melted butter. Sprinkle over the top of the mac and cheese.
  8. Bake for 20–25 minutes until golden and bubbly on top.
  9. Let it rest a few minutes before serving. Extra cheese stretch guaranteed!
