This incredible dish made with just potatoes and 2 eggs is a true family favorite — golden and crispy on the outside, soft and savory inside. Passed down from my village grandmother , it uses only a few simple ingredients that most of us already have at home. Whether you’re cooking for breakfast, lunch, or dinner, this hearty meal will impress everyone at the table.

✅ Ingredients:

  • 1kg potatoes
  • 2 eggs
  • Salt and black pepper (to taste)
  • Sweet paprika (optional)
  • 1 carrot (grated)
  • 2 onions (finely chopped)
  • 2 garlic cloves (minced)
  • Fresh parsley and dill (chopped)
  • 4 tablespoons breadcrumbs
  • 50g cheese (grated mozzarella or any melting cheese)
  • Your favorite sausages (optional)
  • Vegetable oil (for frying)
  • Butter (optional, for extra richness)

🥄 For the Creamy Garlic Sauce:

  • 3 tablespoons sour cream
  • 1 tablespoon mayonnaise
  • Salt and black pepper
  • 1–2 garlic cloves (minced)
  • Chopped dill
  • 1 vinegar cucumber (chopped, optional)

👨‍🍳 Instructions:

Step 1: Grate and Squeeze the Potatoes
Peel and grate the potatoes. Squeeze out excess moisture using a clean kitchen towel. Transfer to a large bowl.

Step 2: Add Flavorful Mix-ins
Add finely chopped onions, minced garlic, grated carrots, fresh herbs, salt, and pepper. Stir well to combine.

Step 3: Bind the Mixture
Crack in the eggs and add breadcrumbs. Mix thoroughly until everything is evenly combined and slightly sticky.

Step 4: Optional – Add Cheese & Sausage
For extra flavor, stir in a sprinkle of grated cheese. You can also layer cooked and sliced sausages between the potato mixture when frying or baking.

Step 5: Shape into Patties
Using your hands or a spoon, shape the mixture into small to medium-sized patties.

Step 6: Fry Until Golden
Heat a mixture of butter and vegetable oil in a skillet. Fry the patties on medium heat for about 3–4 minutes per side until golden brown and crispy.
