These golden, crispy-on-the-outside, soft-and-flavorful-inside potato muffins are made with just 2 eggs and 3 potatoes — plus a few simple pantry ingredients. - 3 medium potatoes
- 2 eggs
- Salt and black pepper (to taste)
- Sweet paprika (optional)
- 1 carrot (grated)
- 1 onion (finely chopped)
- 4–5 mushrooms (sliced)
- 1 clove garlic (minced)
- Fresh parsley and dill (chopped)
- 2 tablespoons cornstarch
- 100g cheese (mozzarella or any melting cheese)
- Vegetable oil (for frying)
🥄 For the Creamy Garlic Sauce:
- 3 tablespoons sour cream
- 1 tablespoon mustard
- Salt and black pepper (to taste)
- 1–2 garlic cloves (minced)
- Fresh dill (chopped)
👨🍳 Instructions:
Step 1: Grate and Squeeze the Potatoes
Peel and grate the potatoes. Squeeze out excess moisture using a clean kitchen towel. Transfer to a large bowl.
Step 2: Add Flavorful Mix-ins
Add grated carrots, finely chopped onions, garlic, mushrooms, fresh herbs, salt, pepper, and sweet paprika. Stir well to combine.
Step 3: Bind the Mixture
Crack in the eggs and add cornstarch. Mix thoroughly until everything is evenly combined and slightly sticky.
Step 4: Shape into Muffins
Using your hands or a spoon, shape the mixture into small to medium-sized patties or muffin shapes.
Step 5: Fry Until Golden
Heat vegetable oil in a skillet. Fry the muffins on medium heat for about 3–4 minutes per side until golden brown and crispy. Remove and drain on paper towels.
Step 6: Add Cheese (Optional)
During the last minute of frying, sprinkle cheese over the top so it melts slightly.
Step 7: Make the Creamy Garlic Sauce
While the muffins cook, mix sour cream, mustard, garlic, salt, pepper, and dill in a small bowl. Chill until serving.
