Grandma’s Village-Style Potato Pies

Do you have 3 potatoes and 1 egg? Try this beloved family recipe passed down from my village grandmother—it’s a crowd-pleaser! These crispy, flavorful potato pies are easy to make with simple ingredients, yet the result is absolutely delicious. Cooked with love, they’re perfect for any occasion.

Ingredients:

  • 3 potatoes, grated
  • 1 egg
  • Salt, to taste
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 small carrot, grated (optional)
  • 100 g ham, diced
  • 70 g cheese, grated
  • 4 tbsp breadcrumbs
  • Fresh parsley, chopped
  • Black pepper and Italian herbs, to taste
  • Butter or vegetable oil for frying

For the Sauce:

  • 3 tbsp sour cream
  • 1 tbsp mayonnaise
  • 1-2 cloves garlic, minced
  • Fresh dill, chopped
  • 1 pickled cucumber, finely chopped
  • Salt, to taste

Instructions:

  1. Prepare the Potato Mixture:
  • Grate the potatoes and squeeze out excess moisture.
  • In a bowl, mix the potatoes with egg, salt, garlic, onion, carrot (if using), ham, cheese, breadcrumbs, parsley, and spices.
  1. Shape and Fry:
  • Heat butter or oil in a pan over medium heat.
  • Form small patties from the mixture and fry until golden and crispy on both sides.
  1. Make the Sauce:
  • Combine sour cream, mayonnaise, garlic, dill, chopped pickled cucumber, and salt. Mix well.
