Spicy Pani Puri (Indian Street Food with Tamarind & Mint Water)

Experience the explosive flavors of Mumbai street food with these crispy puris filled with spicy mashed potatoes, chickpeas, and tangy tamarind-mint water (pani). A burst of sweet, spicy, and sour in every bite!

Ingredients

For the Pani (Spicy Water):

  • 1 cup mint leaves
  • ½ cup cilantro
  • 2 green chilies
  • 1 tbsp tamarind paste
  • 1 tsp roasted cumin powder
  • 1 tsp chaat masala
  • ½ tsp black salt
  • 4 cups cold water

For the Filling:

  • 1 cup boiled potatoes, mashed
  • ½ cup boiled chickpeas
  • 1 tsp red chili powder
  • ½ tsp chaat masala
  • 1 tbsp sev (crunchy noodles)

Other:

  • 20-25 ready-made puri shells
  • ¼ cup sweet tamarind chutney

Instructions

1️⃣ Make Pani:

  • Blend mint, cilantro, chilies, tamarind, cumin, chaat masala, and black salt with 1 cup water.
  • Strain and mix with remaining 3 cups water. Chill for 1 hour.

2️⃣ Prepare Filling:

  • Mix mashed potatoes, chickpeas, chili powder, and chaat masala.

3️⃣ Assemble:

  • Crack open puri tops. Fill each with 1 tsp potato mix, 2-3 chickpeas, and ½ tsp tamarind chutney.
  • Dip in pani and eat immediately!
