Perfect Pan-Seared Sirloin Steak with Garlic-Herb Butter

Ingredients

For the Steak:

  • 2 sirloin steaks (1.5″ thick, ~12 oz each)
  • 2 tbsp high-smoke-point oil (avocado or grapeseed)
  • 1 tbsp kosher salt
  • 1 tsp black pepper

For the Garlic-Herb Butter:

  • 4 tbsp unsalted butter, softened
  • 2 garlic cloves, minced
  • 1 tbsp fresh parsley, chopped
  • ½ tsp rosemary, minced
  • ¼ tsp red pepper flakes

Optional Sides:

  • Roasted garlic mashed potatoes
  • Sautéed asparagus

Instructions

1️⃣ Prep Steak:

  • Pat steaks dry. Season generously with salt and pepper 30 mins before cooking.

2️⃣ Sear:

  • Heat oil in cast-iron skillet over high heat until smoking.
  • Add steaks. Cook 3-4 mins per side for medium-rare (130°F internal temp).

3️⃣ Baste (Optional):

  • Reduce heat to medium. Add 2 tbsp butter, garlic, and herbs to pan.
  • Tilt pan and spoon foaming butter over steaks for 1 minute.

4️⃣ Rest & Serve:

  • Transfer to a plate. Top with herb butter. Rest 5 mins before slicing.
